The Sydney Chocolate School trains budding chocolatiers the traditional French technique of hand tempering on marble. Level One concentrates on students understanding the principles of tempering and practical demonstration of this art.

Most Popular 1.5 Hour Chocolate School
Learn how to hand temper milk chocolate on a marble slab. All participants make a range of chocolates including chocolate bars, raspberry filled chocolates, lollypops with cocoa butter artwork and freckles!
ALL chocolates made are taken home by the group on the day. A certificate is awarded for each participant.
This is an introductory course for a fun filled afternoon. For friend or family groups of 6 or more, you can have a time and date just for your own group at no extra charge!
THE THEORY OF HAND TEMPERING ON MARBLE
This is a three hour theory based course. It is the course for those participants wanting a trainer led class to discuss the history of chocolate, the theory of hand tempering on marble for milk, whose and dark chocolate, the explanation of bar to bar manufacturing and the tasting and comparison of single origin chocolates.
This class demonstrated the above with three hand tempers on marble using more than just milk chocolate.
Please note this is a theory class and a sample of each trainer led temper is tasted during the class.
For those wanting to make chocolate and take all made home; please book the 1.5 hour class. This class is trainer lead discussion and small samples of what is made to demonstrate these discussions.
